You don’t have to. DLC characters are separate characters, so your Goku and Vegeta having level 250 won’t make DLC Goku and Vegeta max level as well.
Yeah I fought beerus and 250 and it still took me a while to defeat him, you cannot use healing items either so the health you start it with, is what you get for his whole 5 health bars
